Daikon Pickles
I would avoid buying these pickles at Shirokiya because they were too pricey. Now, I can make this for a fraction of the price! No kidding, 2 daikons and 2 Japanese cucumbers for a $1 each at the Kalihi farmer's market. Candice Kumai's recipe calls for only daikon but I added cucumber and carrots for color. Daikon radishes are packed with Vit C,fiber, and potassiumm with natural diuretic properties. Good and good for you!
