This is what our Saturday mornings have been looking like lately-body surfing at Makapuu in the morning, lunch and a nap, then surfing in the late afternoon. Lucky we live Hawaii! By the way, every beach I visit, I always make a point to pick up trash. To fill a bag is way too easy which is sad. Do me a favor and pick up trash when you're at the beach.
Who doesn't love crispy, baked potato skins stuffed with all the goodness of life? And that goodness is of course, is cheese, bacon, and sour cream! I LOVE potato skins and I always order them at the Shack before my burger. Incredibly easy and delish!
Recipe calls for tequila but we're not drinkers, so just lime juice, olive oil, cilantro, and garlic had to do...and it was delicious marinated with mahimahi! This meal was restaurant quality with Pioneer Woman's Mexican rice and refried black beans.
